Blueberry Scones Recipe

This recipe makes 16 scones and should take around 20 minutes.

You will need the following:

4 cups of flour (all-purpose)
4-4 1/2 teaspoons of baking powder
2 tablespoons cold butter
2 fresh eggs
6 tablespoons of sugar
3/4 cup plus 2 tablespoons milk (divided)
1-1/2 cups of fresh or frozen blueberries
1/2 teaspoon salt

How to make your scones:
In a large mixing bowl, take the flour, baking powder, salt and sugar, add in the butter until mixture resembles coarse breadcrumbs. In another mixing bowl, whisk the eggs and the 3/4 cup of milk then add to dry ingredients until moistened.

Turn the contents of the bowl onto a surface which has been lightly floured and gently press in the blueberries. Slice the dough in half and then pat each portion into an 8-in. circle. Finally slice each into eight pieces and then place onto greased baking sheets.

Brush with the remaining milk and bake at 375 for 20 mins or until golden brown. Serve warm. Recipe Makes: 16 scones.
