Cherry Scones

Here is a recipe that you can use to make dried cherry scones, it was kindly submitted by Jenny Dier of Toronto.

You will need the following ingredients....

3 cups of flour - all purpose flour
Third of a cup of Sugar
2 and a half teaspoons of Baking powder
Three quarters of a teaspoon of salt
Half teaspoon Soda
Three quarters of a cup of butter - make sure this is cold, unsalted and cut into small pieces.
Three quarters of a cup Dried cherries
1 teaspoon of lemon zest, finely chopped
1 cup of buttermilk
1 tablespoon of cream (for glaze)

Mix the flour, the sugar, soda, baking powder and salt together in a large bowl.

Slice in the butter until it resembles coarse cornmeal.

Mix in your dried cherries and lemon zest.

Add the buttermilk slowly whilst mixing to combine.

Join the dough into a ball and turn out onto a lightly floured surface and flatten into a 1/2" thick circle.

Cut into small rounds and place 1" apart on a lightly greased baking sheet.

Brush the tops with cream and bake in a 425 deg oven until golden - about 10-12 minutes.

This scone recipe will make around 20 servings.
