Low Fat Scone Recipe

This is a fairly low fat scone recipe submitted by J Campbell, Sydney, Australia

Ingredients

You will need the following for your low fat blueberry scones

2 cups of flour
1 Tablespoon baking powder
1/4 teaspoon salt
1/4 teaspoon baking soda
1/4 cup sugar
1 Tablespoon grated lemon rind
1/4 cup butter
3/4 cup buttermilk or plain, low fat yogurt
1 egg
1 teaspoon of vanilla
2 cups of blueberries

To make your low fat scones follow the following recipe:

Mix the dry ingredients together in a large mixing bowl, add in the butter by cutting slices and adding into the dry ingredients. Mix together until a fine mix is created.

Mix the wet ingredients separatly in a different bowl and then add these wet scone ingredients to the dry, stirring the mix with a fork until all the mixture has been nicely moistened. Blend in the blueberries.

Using a large spoon, drop the mix onto a cookie / baking sheet. Flatten by hand into a number of rounds.

Bake in a preheated oven (at 400 F) for 18 minutes. Make a glaze by mixing in a small bowl using 3/4 cup icing sugar, 1 tsp of the lemon rind and 3 Tbsp of lemon juice Mix and drip over scones while still warm.
