Potato Scone Recipe

150g Cooked and sieved potatoes
100g Plain flour
1 Rounded teaspoon baking powder
50g butter
Approx 2 tablespoons milk
Pinch of salt

Sift the flour, baking powder and salt into a basin. Lightly rub in the butter. Mix in the sieved potato, which should be very dry, and enough milk to make a softish dough. Turn onto a floured board and lightly knead. Roll out to 1.25cm thickness and cut into small rounds.

Bake on a greased baking sheet in a pre-heated oven for 15 to 18 minutes. Cool on a rack and serve.
