Raspberry Jam Scone Recipe

raspberry jam and sconesPlease find below a fairly easy to bake scone recipe for raspberry jam scones.


Ingredients

For the scones you will need the following ingredients..
125g/4˝oz self-raising flour
50g/2oz cold butter
1/2 tsp baking powder
1 tablespoon of brown sugar
1 egg, beaten
1 tablespoon milk
For the raspberry jam you will need the following:
4 tablespoons of caster sugar
1/2 a vanilla pod with the seeds removed
75g/2˝oz of fresh raspberries

When serving your scones you will need...
75ml/2˝fl oz double cream, lightly whipped and some icing sugar to dust Here is how you make them...

1. Heat your oven to 220C/425F/Gas 7. 2. Place the flour, butter, baking powder and brown sugar into a food processor and pulse until the mixture resembles coarse breadcrumbs. 3. Add egg and milk and pulse until the mixture comes together. 4. Turn the mix out onto a floured surface and roll to 2cm thick.
5. Cut out five 5cm/2in circles using a pastry cutter (lightly floured). 6. Place scones onto baking sheet lined with baking paper and brush with milk.
7. Transfer to the oven and bake for 15 minutes, or until golden-brown.

Here is how to make the raspberry jam for your scones..
1. Place the sugar, vanilla seeds and 1/2 of the fresh raspberries into a pan C
2. Cook over a low heat for ten mins.
3. Remove from the heat and then add the remaining raspberries and stir well.
3. Leave to cool.

Place your finished scones onto a plate with the jam in a bowl alongside. It is advised you also provide some fresh whipped cream to accompany your scones!.. enjoy.
