Sultana / Raisin Scones Recipe

Makes 12 sultana scones

Time to prepare: less than 15 minutes
Time to cook: 10 to 15 minutes

225 g/8 oz/2 cups plain (all-purpose) flour
A pinch of salt
7.5 ml/0.5 tsp lemon juice
2.5 ml/0.5 tsp bicarbonate of soda (baking soda)
2.5 ml/0.5 tsp cream of tartar
25 g/1 oz/2 tbsp caster (superfine) sugar
50 g/2 oz butter or margarine
50 g/2 oz sultanas (golden raisins)
150 ml milk

Sultana / Raisin Scone Recipe

Sultana Scones Instructions
Mix the flour, salt, bicarbonate of soda and cream of tartar together in a large bowl. Add in the butter or margarine, rubbing until the mixture resembles breadcrumbs. Stir in the sugar and sultanas. Mix the lemon juice into the milk and gradually stir into the dry ingredients until you have a soft dough. Knead lightly, then roll out to about 1 cm/0.5 in thick and cut into 5 cm/2 in rounds with a biscuit (cookie) cutter. Place the sultana scones (biscuits) on a greased baking (cookie) sheet and bake in a preheated oven at 230°C/450°F/gas mark 8 for about 10 minutes until well risen and golden brown. Cool your sultana scones on a wire rack and serve.
